Recipe Yields: 24 servings (1 wrap per person)
Recommended Packaging: freezer bags or other packaging of choice
Ingredients and Instructions
3 pounds smoked turkey, sliced
1 pound blue cheese, crumbled
3 cups chopped walnuts, toasted
24 large wraps (lavash or tortilla)
Portion turkey, blue cheese, walnuts, and wraps in separate bags. (For each four-serving meal, ½ pound turkey, ½ cup blue cheese, ½ cup walnuts, 4 wraps.) Place one portion of each ingredient in a freezer bag. Seal bag, pressing out excess air. Freeze.
1 medium onion
¼ cup plus 2 tablespoons white wine vinegar
¼ cup plus 2 tablespoons balsamic vinegar
2 tablespoons Dijon mustard
3 tablespoons sugar
1 ½ cups olive oil
1 teaspoon pepper
½ teaspoon salt
Process onion until finely chopped. Add vinegars, Dijon mustard, and sugar. Process. Slowly drizzle in olive oil. Season with salt and pepper. Divide evenly among desired packaging.
6 large pears or 6 15-ounce cans pears in natural juice
6 bagged salads of choice
Bag balsamic vinaigrette, pear, and salad. Refrigerate.
Preparation Instructions
Defrost frozen ingredients in refrigerator. Assemble wraps (or salads). Serve at room temperature.
