It’s that time of year! The apples are plentiful and begging to be popped into your freezer. One of our favorite frozen stockpiles is apple crisp. Last year, Becki converted an entire bushel of Ida Reds into about 25 4-cup apple crisps. Her husband, Randy, helped by cranking away on an apple-corer-peeler-slicer. She tried to keep up, coating apple slices with sugar and spices, and covering them with a crisp topping. Her stash lasted well into the winter. And she was able to give away a number of them as Thanksgiving gifts for teachers and school bus drivers.
One Cooking Among Friends® devotee hosts an annual apple crisp party. She has everyone bring a pound of butter and six pounds of apples. She provides the dry goods and spices for the topping and filling. Friends peel and slice the apples, someone processes the topping, and everyone goes home with five or six 4-cup tins of apple crisp. Brunch is served before the crisps are made . . . and of course a large one is baked to eat after clean-up!

Apple Crisp
Recipe Yields: 24 servings (1 cup per serving)
Recommended Packaging: aluminum tins with lids or other packaging of choice
Ingredients and Instructions
6 pounds apples, peeled, cored, and sliced
1 tablespoon lemon juice
1/2 cup brown sugar, packed
In a large bowl, mix together apples, lemon juice, and brown sugar. Divide evenly among tins.
1 1/2 cups brown sugar, packed
1 1/2 cups all-purpose flour
1 cup quick or old-fashioned oats
3/4 cup butter or margarine, softened
In a large mixing bowl, mix together sugar, flour, oats, and butter. Divide evenly among tins, sprinkling over sliced apples. Cover with a sheet of plastic, pressing down to cling to food. Apply lid. Freeze.
Reheating Instructions
Defrost completely. Remove board lid and plastic wrap. Preheat oven to 375°. Bake until apples are tender (approximately 45 minutes).

I hosted an “Apple-crisp-a-thon” for the ladies on my street a couple weeks ago. My friend and I supplied dry ingredients and disposable tins, everyone else brought apples and butter, and we each took home 4 tins of apple crisp for our freezers. It was really fun, and the batch of crisp we made to eat with everyone that night was very tasty. Thanks for the idea!!

Excellent! Used this recipe to clear out all of the beat up apples in my crisper and will definitely make again. For a super easy dessert, suggest recipe #156544. My family gobbled it down, then begged for it the again. The third night I put them off so I could have some pie filling left for the freezer. Have had my eye on this recipe for some time, love that unlike the stuff you buy in the store, it has no high fructose corn syrup and tastes like honest to goodness apples.
